- 1/2 cup Shrimp
- Mediterranean Seasoning
- 1/2 Tablespoon Paprika
- 1 Teaspoon Red Curry Powder
- 1/2 Tablespoon Onion Powder
- Salt
- Pepper
- 1/2 cup Brown Rice
- 1 cup water
- 1/4 stick Butter
- 1/2 can Tuna in oil
- 3 Cucumbers
- 2 Tablespoons Red Onion, chopped
- 2-3 Tablespoons Salad Cream (located in international section of grocery store).
- 2 vines fresh Dill, chopped
- Micro-greens
- Pineapple
Boil 1 cup water in small pot. While it’s warming up, cut your cucumbers and red onion and put in small mixing bowl. Add the tuna fish, fresh dill and salad cream. Mix together and set aside. Once the water boils, add in rice, turn heat to simmer and cover for 20 minutes. Grab a medium pan and add shrimp and half of the 1/4 stick butter. Once butter is melted, stir in paprika, red curry, onion powder and Mediterranean seasoning. Shrimp are completely cooked once they turn pink and are smaller in size. Check on rice, once it is done add in the other half 1/4 stick butter and mix in with salt and pepper. Dish up— place rice on bottom, then shrimp, then micro-greens on top!
